Before we get into fillet knives, let's count fingers...and do something to maintain 'em.

normarkFG.jpg (39102 bytes)Normark, the maker of Rapala lures, produces a number of fillet knives and accessories.  While most of their knives are freshwater size and unacceptable for marine use, they do have one product that's essential to any fishermen.  They make a glove that will help you keep your fingers out of the gumbo - literally.  The highly flexible glove is made from a stainless steel fabric material that's quite good at preventing cuts and slices.  You can still chop through them with a serrated blade, or poke through them.  But, you'll prevent most all of the slices you might get from a sharp fillet knife.  You'll also get a better grip on the fish.  The gloves are machine washable, so you can keep 'em clean.  I like these a lot, use them whenever I'm cleaning fish.

Normark Fillet Glove @ $14.95 (large size only -. the glove will size to fit most hands, it's stretchable.)

New from ProFish Co.

Here's a wonderful new product from the folks at ProFish Co., makers of great lures and now branching out into tools and knives. The new knives have a unique feature, they come in a nice sheath that also offers self-sharpening! Yep, as you put the knife into it's corm fitting sheath (with belt loop) the blade gently makes contact with two "crock sticks" which sharpen the blade.

The knives are available in two lengths, with a 6 or 7 inch blade. The handles are a tacky sure grip type finish. The blades are made in Japan and are stainless steel. They're thin and flexible and are well designed for fishermen. To top everything, they're a heck of a great value!

Dexter Russell Offshore Knives

Widest line of sanitary, NSF-Certified, professional cutlery in the world.  Dexter Russell is the blade of choice for professional chefs and butchers, for good reason.  They have an exceptional blade, sharpens well and holds the edge.  We're increasing our selection from this manufacturer...slowly.  We're now stocking their sharpener, as well as the finest inexpensive bait knife I've used...or owned.
dexterrusselbaitknife.jpg (33947 bytes)

Here's a very nice bait knife.  This mini Dexter has a serrated edge and comes with a nice plastic sheath.  It's a very useful companion on any trip, with a blade that's sufficient to cut line, bait, or bone.  It's not a mickey mouse dull butter knife.  It's a sharp instrument, and will last a long long time.

Sashimi Knives

We've added a few more Dexter Russell knives to our mix. We've sold the more standard 8" fillet knife and breaking knives since we started, we rarely expanded upon those basic necessities. Dexter added some wonderful sashimi knives to their line. These knives are sharpened on one side only, differentiating from the breaking and fillet knives which are ground on both sides. Those knives also have a Sanisafe handle instead of the magnolia-wood handle which grace the Japanese-style cutlery. If you've ever wondered how the Sushi Chef prepares such clean and thin cuts on a beautiful chunk of fish, well now you do - it's the blade. Dexter Russell knives have the best blades. Period. That's why they are the first choice of folks in the professional culinary field. Their stainless steel blades hold an edge, and take on an edge beautifully. They are an instrument that will last a lifetime with proper maintenance and use.

Deba knives are for separating meat from bone, slicing fish with the least waste or damage to delicate fillets. The heavier Nakiri is a chopper, and the straight blade Sashimi knife is just that - the slicing of fresh fish. These knives are razor sharp.

Dexter Russell
Fillet and Breaking Knives

Breaking Knives, Fillet Knives and Cimitars: These are the same knives used on the better long range boats out of San Diego, the deckhand's favorites.  The only difference is that these come with a nicer handle.  These knives are made in the USA with high carbon stain free steel.   They hold an edge, and are capable of doing the hard jobs, over and over again.   You can't find better quality, or better durability in a fishing knife. Without a doubt, these are my favorites...and they'll be yours too!

Dexter/Russell professional fish knives offer the fisherman or processor the best product on the market at a very good value.  These fine knives are the result of over 174 years of American knife making experience. The knife edges are stone ground and honed by hand from stain free high carbon or high carbon cutlery steel to provide you with an edge that's long lasting...and super sharp! These are "the kind" you can get no better workhorse fish processing knife.  There's a reason they are used on all the long range boats - they're the best.

Edge World Knives

Here's another terrific buy on some very nice knives.  They are no Dexter Russel, but then again they are about 1/2 the price and are also very good
quality.  There are four knives in the series plus one sharpener.  Three of the knives are scimitar style curved blades, one is a straight and thin fillet knife.  All are well made and terrific values.  Here's the deal, besides offering a great price, if you buy all in the series we'll toss in a very nice case for the knives.  It is zippered and will hold four more full size knives in addition to the four plus sharpener you'll be getting with the full kit.  Nice knives, great price, and if you buy all five products offered you'll get a $20  knife case for FREE!  Now that's a dandy deal.

Donnmar Check Point Sharpening Systems - knife and hook sharpeners

logo.jpg (1770 bytes) Check Point makes some great sharpeners, and also some exceptional cutting  tools.    You don't have to be an expert to get an edge!  Donnmar makes some great "essentials" their hook sharpeners are the best I've used.

sharp1.jpg (15440 bytes)The item on the right in the photo is about as nifty an accessory as you can get.   There's a storage compartment which holds a dozen hooks or so, and on the side is the genuine Swedish steel cutter system to give a perfect razor-sharp hollowcut point to your hooks.  The CP150 fits easily into your pocket so you're ready for action.  I've used mine for several years now, the product is very, very good.   You can't find a more useful item, for any angler.   Donnmar also has a similar sharpening product without the storage compartment, but includes a magnifying lens (CP125).  This is probably their most popular sharpeningsharp2.jpg (9794 bytes) instrument (but I still like the one with the storage compartment more).

The product on the left above and also pictured on the right (CP 501) is Donnmar's Check Point Fisherman's Knife Sharpening System.  This clever, compact product features the same great hook sharpening system as described above, and a knife sharpener that delivers a perfectly aligned hollow-cut edge to your blades.  Like the hook sharpener, all you have to do is glide the blade through the Swedish steel cutters a few times to deliver a razor sharp edge - for both your blades and hooks.  I always keep on of these in my tackle box on the boat.  It's perfect for putting an edge back on your fillet knives.

sharp3.jpg (42767 bytes) The CP212 Big Game hook sharpener is the best hook sharpener I've come across.  It's fast, easy, and gives excellent results each time you use the product.  It features long lasting high-carbon steel files, mounted to a handle (you can replace the sharpening rods as needed...I've got four years on my own Big Game 212 and it's still going strong).  This is a perfect device for making your big game hooks razor sharp - and that's as  essential an ingredient to good fishing as there ever was.  If you work with larger saltwater hooks, you need this product.

CP100.jpg (84762 bytes) Check Point - CP100 hook sharpener @$9.95 Cp125.jpg (25486 bytes) Check Point - CP125 hook sharpener @$11.99
CP212.jpg (11259 bytes) Check Point - CP212 big game hook sharpener @$15.99 CP501.jpg (7456 bytes) Check Point - CP501 hook & knife sharpener @$19.99
